Blueberries for Good Health
Blueberries are a special part of our summer. We live in berry country as our growing conditions are perfect for raspberry, blueberry, strawberry, currants, blackberry, huckleberry and our native salmonberry. It’s summertime and the blueberries are abundant in Western Washington. Last week my children and I picked 30 pounds and we plan to pick at least 30 more this coming week.
Blueberries are delicious eaten raw or in all sorts of recipes. They can be dried, canned, made in to preserves, added to smoothies, pickled, made in to syrup or added to all sorts of yummy baked goods. Blueberries are good most any way but did you know that there is something very special about blueberries? In addition to being rich in vitamin C which aids in the absorption of iron and promotes healthy immune systems and good skin but it also has potassium, vitamin A and folate.
Blueberries are rich in phytonutrients and are anti-inflammatory. This is great news for those of us who already love these beautiful little berries! So enjoy your blueberries and maybe even eat some extra. They are good for you!
